Keto Brownie Bites
This week is 4th of July. It falls in the middle of the week so you have three options. Take two more days off work and make a five day weekend, take four days off work and get a whole week or stay at home. Even if you choose to take more days off work for a long weekend, which way do you go? Do you make a long weekend and end with 4th of July or do you start the weekend with 4th of July and take the following weekend off?
As a farmer, I don't have to choose. We are busy on the farm and therefore, leaving is not an option. Hopefully the 4th will be a half day of work so we can enjoy a backyard bbq or something low key at home.
Regardless of the option you choose, there will be lots of bbqs, backyard parties, swimming and endless eating. Whether it is a potluck, your own party or just the family, I bet you will be having some great food.
I don't know about you, but when it comes to potlucks or hangouts with friends, I always indulge. There is just always so many good looking and tasting things that I have to try a little of everything. But summer is also here and those dang swimsuits and shorts don't seem to agree with indulging.

I know Keto is a huge fad right now, but I'm all about just eating things that taste good and aren't terrible for my waistline. Almond flour helps you do this. Almond flour is gluten free, heart healthy, helps lower cholesterol and is rich in iron, magnesium and potassium. Almond flour is a great substitute for all purpose flour, but it does act a little different.
My friend over at Pearl Crop was kind enough to provide me some partially defatted almond flour. Defatted is a process they like because it presses the excess oil out and makes the flour purer. You can buy it from Barney Butter

I am going to admit, it took me a few trys to get the recipe perfect, but I am so glad I didn't give up. Almond flour makes this recipe perfect! Regardless of your feelings on Keto and diet fabs, I would encourage you to give this recipe a try. You an find almond flour just about anywhere or make it yourself pretty easy. And I can feel better about having an extra brownie bite and wearing that swimsuit.
I had a little helper with this recipe and he had just as much fun as I did making these. He loves to help me bake but he usually looses attention most of the way through. He got to be the topper, but I think he ate more almonds than he put on top of the brownies. That's okay, he had fun.
Plus, he was my official taste tester so that is always a bonus!
I like to use silicon mini muffin pans because I feel like the brownies come out cleaner and easier. Be sure to place the silicon pans on a baking sheet because they are flimsy. They come out ooey and oh so yummy.
